Head chef Kuba Winkowski sources ingredients and produce from local suppliers, where possible, and aims to focus on assisting the local rural economy.
Typical dishes include consommé with game tortellini, buckwheat, madeira, winter truffle to start, followed by wild boar with whipped potato, pear, red onion, sour winter slaw, perry sauce for main and Valrhona Chocolate peanut butter, salted caramel, brittle to finish.
